I was inspired to make this cake because of a lovely looking "Vicky Sponge" that everyone enjoyed on  "The Book Group" episode I watched recently on Hulu.  The original layer-cake recipe is here.  I decided to make a bundt cake since I didn't want to mess with filling layers and I had some blueberries :)

Vicky Blueberry Bundt

1 C Flour
1 1/2 tsp Baking Soda
1/2 tsp Salt
1 C Butter, softened (microwave is easy and quick)
1 C Granulated Sugar
4 Medium Eggs (opened and mixed in a bowl before hand)
2 tsp Vanilla Extract
3 oz. Blueberries

(I forgot to put the Vanilla Extract in the picture.)

In a bowl, mix together the Flour, Baking Soda, and the Salt. Set aside.

In a large bowl, cream the Butter and Sugar.  

Add the Egg mixture in about 4 parts, using a slower setting on the mixer.

Add the Vanilla and mix with a spoon.

Taking it in 4 parts, fold the Flour mixture into the large bowl.

Fold in the Blueberries.

Pour into a small Bundt pan, preferably greased with the remnants of the butter stick wrapped.  Knock the pan a few times to help settle the batter. 

Place in 350 degree oven for 25-30 minutes, until a toothpick comes out clean.

Let cool on a wire rack, in the pan, for about 20 minutes. Remove from bundt pan by placing rack or plate over the top of the pan and quickly turning over. The cake should slide out when properly cooled.
