I stumbled onto Mom Foodie because of a giveaway, of course. She doesn't do a lot of those I quickly learned, but she does cook amazing food! Every recipe looked and sounded fresh, healthy and of course tasty. The most recent recipe that perked up my taste buds was her Asian Salmon, Green Bean and Quinoa Salad recipe. Why you ask, mainly because I had all the ingredients in the house. We had to try it.

Hubby took the plunge and got started.  He was about to cook his first healthy recipe.  He much prefers beef and potatoes and creamy sauces and dressings. I prefer vegetarian fare myself, thus the conundrum when it comes to agreeing on a recipe to try. Luckily he likes salmon and will eat quinoa because I repeatedly ask him to try this healthy, non-wheat grain.

It turned out delicious and tangy. The only changes we made were to cook the salmon fully and use fresh steamed green beans.
